
Fig and Prosciutto Tart
Sweet figs, prosciutto, and caramelised onion baked into a golden tart. Simple to make and beautiful to serve - the perfect dish for a summer lunch with friends 🌞💌
INGREDIENTS
1 sheet puff pastry
3 red onions, thinly sliced
Extra virgin olive oil (Mondegão)
6–7 fresh figs, halved
6 slices prosciutto
Handful of fresh basil
200g ricotta
Zest and juice of ½ lemon
Pinch of salt
1 egg
METHOD
Step 1
Slowly caramelise the onions in Mondegão until soft and golden.
Step 2
Whip the ricotta with lemon zest, lemon juice, and a pinch of salt until smooth.
Step 3
Roll out the puff pastry and spread the whipped ricotta over the base. Add the caramelised onions and scatter with basil. Arrange the figs on top and drizzle with Mondegão.
Step 4
Brush the edges of the pastry with beaten egg.
Step 5
Bake at 200°C for 20–25 minutes until golden.
Step 6
Finish with slices of prosciutto, a final drizzle of Mondegão, and a few fresh basil leaves.
