
Heirloom Tomato Toast
INGREDIENTS
2 large ripe tomatoes (heirloom if possible)
2 thick slices of sourdough
1 fresh mozzarella
Handful of fresh basil leaves
Juice of ½ lemon
Extra virgin olive oil (Mondegão)
Freshly ground black pepper
Pinch of flaky sea salt
METHOD
Step 1
Toast the bread until golden and crisp.
Step 2
Slice the tomatoes thickly and arrange them on top of the toast.
Step 3
Slice over some mozzarella and scatter fresh basil leaves.
Step 4
Squeeze over the juice of half a lemon, drizzle generously with Mondegão, and season with flaky salt and freshly ground black pepper.
Step 5
Serve straight away, while the bread is warm and the tomatoes are at their juiciest.
