
Peach, Cucumber & Burrata Salad
INGREDIENTS
3 ripe peaches, sliced
½ cucumber, thinly sliced
1 ball burrata (or fresh mozzarella)
Handful of fresh basil leaves
Juice of ½ lemon
Extra virgin olive oil Mondegão
Freshly ground black pepper
Pinch of salt
METHOD
Step 1
Slice the peaches into wedges and the cucumber into thin rounds.
Step 2
Arrange the cucumber slices on a serving plate, followed by the peaches and fresh basil leaves.
Step 3
Tear the burrata into pieces and scatter over the salad.
Step 4
Squeeze over the juice of half a lemon, drizzle generously with Mondegão, and season with salt and freshly ground black pepper.
Step 5
Serve immediately, while the peaches are juicy and the burrata is creamy.
