Portuguese Olive Oil Biscuits
Adapted from Maria de Lurdes Modesto’s Cozinha Tradicional Portuguesa.
INGREDIENTS
5 whole eggs
3 egg yolks
250g sugar
1 dessert spoon ground cinnamon
1 cup (250ml) Mondegão extra-virgin olive oil
1kg flour (approximately)
1 egg, beaten (for brushing)
METHOD
Step 1
In a large bowl, beat the whole eggs, egg yolks, sugar and cinnamon until pale and fluffy.
Step 2
Add the olive oil and beat briefly until well combined.
Step 3
Gradually add the flour and knead until a smooth dough forms.
Step 4
The dough should pull away from your hands while remaining soft.
Step 5
Shape the biscuits by rolling small portions of dough into thick logs. With the help of a little flour, shape them into an S or any shape you like.
Step 6
Place the biscuits on a baking tray, brush with beaten egg and sprinkle lightly with sugar.
Step 7
Bake in a very hot oven until golden underneath, with a well-baked, lightly browned base. Allow to cool, then pack and gift to someone special.
