Baked Pears, Olive Oil and Honey

INGREDIENTS

8 pears (Rocha), halved and cored
6 tablespoons honey
8 tablespoons Mondegão extra-virgin olive oil
2 dessert spoon ground cinnamon
Zest of 1 lemon
1 pinch of sea salt

To serve:
Requeijão (cow or sheep’s milk)
Walnuts, roughly chopped

METHOD

Step 1
Preheat the oven to 180 °C (fan). Arrange the pear halves cut-side up on a baking tray.

Step 2
In a small bowl, mix the honey, extra-virgin olive oil, cinnamon, lemon zest and a pinch of sea salt.

Step 3
Spoon the mixture generously over the pears, making sure they are well coated. Add an extra drizzle of olive oil if needed.

Step 4
Bake in the oven for about 30 minutes, until the pears are soft, lightly caramelised and fragrant. Halfway through, baste them with the juices from the tray.

Step 5
Remove from the oven and allow to cool slightly.

Step 6
Arrange the pears on a serving dish. Eat with a slice of requeijão and walnuts.

Step 7
Finish with a final drizzle of Mondegão extra-virgin olive oil and serve warm or at room temperature.
